"Fiore di sale" is made from the small clusters of sea ‘foam’ which form in the top corners of the salt pans. The salt makers hand sweep the delicate foam from the surface and leave it to dry in straw baskets. This precious salt is completely natural, made only by the sun, wind and sea.
Culinary Pairings: Try a whole fish baked under a crust of this moist salt or add to extra virgin olive oil with ground pepper and chili flakes for a wonderful pinzimonio. Only a pinch of this intense flavor is needed to bring the simplest dish to life.
